I have my question regarding the baking of cakes and other items. I am very much fond of baking cakes and other such items at home as I find them a very good and an entertaining way of passing my time. Nevertheless, I want to know that while baking a cake or banana bread, why the middle part always seems to come out soggy?

The best way of passing your time at home other than watching TV programs or movies is to do some kind of cooking or baking. This does not only make you pass your time but also ends up in giving you something nutritious which you usually do not get to have while performing other tasks at home. Now as far as the question is that why the middle part of the cake or the banana bread remains soggy when baked? The most probable reason could the time that has been taken for cooking it. Usually, we tend to follow the time as indicated in the recipe book. But somehow we do not realize that it depends on the room temperature as well. Like in hilly areas, it takes a bit longer for cooking so this is another possibility. Besides, the best way to make sure that the item is fully baked is to keep on checking it at regular intervals. This may take some extra time but the result would certainly be a desired one.

that is because you have undercooked it a little bit. it has to be cooked longer. the trick to seeing if it is cooked enough... but not overdone.... stick a toothpick right down the center while it is still in the oven. i do this when i know that is it now fully cooked... so i can judge how long to keep it in the oven without overcooking the middle. i keep sticking in a toothpick every 5-10 minutes until when i pull it out, it is clean... no residue. then you know the middle is cooked.
