Poutine, a dish having of French fries topped with fresh cheese curds, covered with brown gravy or sauce and other additional ingredients, is a Canadian National Dish. Poutine is a diner staple, originated in Quebec and can now be found across Canada. Many national fast food chains are selling Poutine in small "greasy spoon" type diners commonly known as "cantines" or "casse-croûtes" in Quebec. International chains such as KFC, A&W, McDonald's, and Burger King also sell mass-produced poutine in Canada. Currently in major urban centers (particularly Toronto) of Canada has emerged, in the form of "posh" or "haute" poutine which are served in trendy restaurants and wine bars. Generally these dishes include the addition of ingredients for example lobster meat, rabbit confit, caviar, truffles, and other ingredients as well. In the basic recipe of poutine, French fries are topped with fresh cheese curds, and covered with brown gravy or sauce. The French fries are of medium thickness, and fried so that the inside stays soft, while the outside is crunchy. The gravy used in poutine is generally light chicken, veal or turkey gravy, mildly spiced with a hint of pepper, or a sauce brune which is a combination of beef and chicken stock, originating in Quebec. Heavy beef or pork-based brown gravies are rarely used. Fresh cheese curds (not more than a day old) are used. To give the texture of the fries, the cheese curd and gravy is added immediately prior to serving the dish. Normally Poutine sauce is sold in Quebec and Maritime grocery stores in cans or jars and in powdered mix sachet.
