there's a Viking Splash Tour which is a lot of fun - you go around the city in a WW2 amphibious vehicle and it takes you out on the bay as well. Looks really good and I've heard good reports, a bit more crack than the typical open top bus tour.
Go to the Irish Museum of Modern Art, in the former Royal Hospital, Kilmainham, it's quite near Kilmainham Jail; also check out the National Gallery in the city centre. And Trinity College is also nice ... there is an open-topped tourist bus service that takes in all the major sights, see the Bord Failte website for more info.
