None really. Most famous French specialties are from other French regions and Paris is not really known for a particular delicacy. But most regional specialties are found in Paris.

One Parisian dish is Entrecôte Bercy, a grilled beef steak served in a white wine and shallot sauce.

A Parisian dessert is Paris-Brest: http://dessertfirst.typepad.com/dessert_...

The baguette is a Parisian bread (of Austrian descent) even though it is now found everywhere in France.

Otherwise the main dish served in a brasserie is Steak-frites (steak and fries).

As for fun and creative activities in Paris, it depends who it's for, adults? Children? English-speakers only? Here are some ideas but I don't know if that's what you are looking for:

For adults: classes in French etiquette, French gallantry (great idea for a bachelor party), How to dress like a French women (fun idea for a bachelorette party), etc

For children, there are a lot of tours designed for children: http://www.parisdenfants.com/#

its a difficult question because there are so many dishes that are prepared very well in France.

I am tempted to name some of the dishes that are relatively less well know that I have eaten there but I think that a better answer would be something simple like roast chicken.

I say this because what is really outstanding about French cooking is not unusual ingredients or complicated presentation but the use of high quality ingredients prepared with meticulous attention to technique.

Especially for Americans who are used to factory farmed chickens and fast food preparation that emphasizes industrial efficiency, a meal of a top quality chicken carefully prepared is a taste revelation.

So my suggestion is to try all the classics of everyday French cuisine, roast chicken, navarin d'agneau, cassoulet, blanquette de veau, and soupe de poisson.

As to something interesting to do I suggest having dinner with Jim Haynes, an icon of the 1960's. Every sunday he throws a dinner in his atelier in Paris where a crowd comprising locals and tourists, professors, actors, rock stars and old hippies shows up. Everyone kicks in 20 euros and there is food and an open bar. Read more here: http://www.jim-haynes.com/index.htm

Which one food is considered a delicacy in Paris? Honey, Paris is the Haute Cuisine capital of the World! French cooking! Cordon Bleu!

I mean! You just walk into any restaurant/bar/café/bistro/brasserie, point and eat and it will probably be one of the best things you have ever put in your mouth!

I recommend (okay, my tastes are rather simple) starting with Croissants and café au lait for breakfast, and work from there.

And for something fun and creative...okay...go back to that Cordon Bleu idea, and take a cooking class...how's that sound?

There are about a hundred art museums in the city, there must be some sort of creative classes at one or another of them.

For me, creatively, all you need to do is plop me down in the middle of the city with my camera and I'm off and running. But that's me.
