None really. Most famous French specialties are from other French regions and Paris is not really known for a particular delicacy. But most regional specialties are found in Paris.
One Parisian dish is Entrecôte Bercy, a grilled beef steak served in a white wine and shallot sauce.

The baguette is a Parisian bread (of Austrian descent) even though it is now found everywhere in France.
